  • 1/2 teaspoon fine table salt
  • 2 tablespoons holiday spice mix
  • 1/3 cup white sugar
  • 1 cup dried fruit blend (or your choice)
  • 1/2 cup candied mixed peel
  • 1 large egg
  • 1 cup buttermilk or plain yogurt
  • 3/8 cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare muffin tins with paper liners or grease lightly.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, spice mix, and sugar.
  3. Fold in the dried fruit blend and candied mixed peel until evenly distributed.
  4. In a separate bowl, beat the egg and mix with buttermilk (or yogurt) and melted butter until well combined.
  5. Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined—lumps are okay!
  6. Scoop the batter into muffin tins and bake for about 20 minutes or until golden brown.
  7. Allow cooling slightly before dusting with non-melting sugar or powdered sugar.
