  • 1 1/2 cups salted butter, softened
  • 1 1/4 cups light brown sugar, packed
  • 1 tablespoon pure vanilla extract
  • 2 eggs, at room temperature
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 12 ounces milk chocolate, melted
  • 2 tablespoons salted butter
  • 3 tablespoons cinnamon sugar

Instructions

  1. Cream butter and brown sugar together until fluffy. Add vanilla and eggs one at a time, mixing well.
  2. In a separate bowl, combine flour, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually mix into the wet ingredients until just combined.
  3. Divide dough in half, flatten into disks, and roll out to 1/4 inch thickness. Cut out cookie shapes with a jack-o'-lantern cookie cutter.
  4. Chill cut-out cookies for 15-20 minutes in the freezer.
  5. Preheat oven to 350°F (175°C) and bake for 8-12 minutes until lightly golden.
  6. Brush baked cookies with browned butter and dust with cinnamon sugar.
  7. Assemble by spreading melted chocolate on the bottom half of cookies without faces and topping with those that have faces.
