  • 5 tablespoons unsalted butter
  • 1/3 cup heavy cream
  • 6 tablespoons unsalted butter
  • 1/4 cup water
  • 2 tablespoons corn syrup
  • 1 teaspoon salt (up to 2 teaspoons of salt to taste)
  • 1 tablespoon apple cider vinegar
  • 3 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup fine ground cornmeal
  • 1 tablespoon white sugar (heaping)
  • 2/3 cup light brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • pinch of salt
  • 2 cups heavy cream
  • 3 tablespoons powdered sugar

Instructions

  1. 1. Preheat oven to 350°F (175°C). Prepare pie crust by mixing flour, cornmeal, sugar, and salt; cut in butter until crumbly. Add ice water and vinegar until dough forms. Chill.
  2. 2. For the filling, heat heavy cream, corn syrup, and butter in a saucepan until melted. Stir in white chocolate until smooth; mix in pumpkin puree and spices.
  3. 3. Roll out the chilled dough and fit into a pie dish; bake for about 20 minutes or until golden.
