  • 1 cup frozen corn
  • 1 can (10 ounces) diced tomatoes and green chilies
  • 1 packet (1 ounce) taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 box (8.5 ounces) Jiffy cornbread mix
  • 2 eggs
  • ⅓ cup whole milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef until browned; drain excess grease.
  3. Add cream-style corn, frozen corn, diced tomatoes with green chilies, and taco seasoning; stir and cook for about 5 minutes.
  4. Sprinkle one cup of cheddar cheese over the mixture.
  5. In a separate bowl, mix Jiffy cornbread mix with eggs and whole milk until just combined.
  6. Pour cornbread batter over the beef mixture evenly.
  7. Bake for 20-25 minutes until golden brown.
  8. Sprinkle another cup of cheddar cheese on top and return to oven for an additional 5 minutes until melted.
