  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 3 tablespoons olive oil
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. Sauté the onion in 1 tablespoon of olive oil over medium heat until translucent (about 5 minutes). Add minced garlic and cook for an additional 30 seconds before removing from heat.
  2. In a large bowl, mix sautéed onion and garlic with ground chicken, chopped spinach, breadcrumbs, Greek yogurt, fresh dill, lemon juice, oregano, paprika, cumin, salt, and pepper until combined.
  3. Shape the mixture into about eight patties (½ inch thick).
  4. Heat remaining olive oil in a skillet over medium heat. Cook each patty for about 5-6 minutes on each side or until golden brown and cooked through.
  5. Drain on paper towels and serve warm with garnishes like lemon wedges or extra dill.
