  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a bowl, combine onions, bell peppers, tomatoes, garlic, olives, olive oil, oregano, salt, and pepper. Toss until evenly coated.
  3. Spread the vegetable mixture in the baking dish and place fish fillets on top. Squeeze lemon juice over the fillets and season with lemon zest.
  4. Bake uncovered for about 20–25 minutes until fish is opaque and flakes easily with a fork.
  5. Garnish with fresh parsley and serve with lemon wedges.
