  • 1 pound shrimp, peeled and deveined
  • 1 pound crabmeat
  • Optional: 1 pint of oysters, shucked
  • Fresh parsley and green onions for garnish

Instructions

  1. Create the roux by heating vegetable oil over medium heat and gradually stirring in flour until it reaches a dark brown color (about 20-30 minutes).
  2. Sauté the onion, bell pepper, and celery in the roux for about 5-7 minutes until softened.
  3. Add minced garlic, Cajun seasoning, thyme, and bay leaf; cook for one minute to release flavors.
  4. Slowly incorporate the stock while stirring to avoid lumps; bring to a boil.
  5. Add sliced turkey sausage; reduce heat and simmer for about 20 minutes.
  6. Introduce shrimp and crabmeat (and oysters if using); simmer gently for another 10-15 minutes until seafood is cooked through.
  7. Remove bay leaf; stir in green onions and parsley before seasoning with salt and pepper.
  8. Serve hot over cooked white rice.
