  • 8 tbsp unsalted butter (divided)
  • 1/4 cup boiling water
  • 1 1/2 cups toasted and coarsely chopped pecans
  • 1 cup granulated sugar

Instructions

  1. Prepare a baking sheet by lining it with aluminum foil or a silicone mat.
  2. In a medium saucepan over medium heat, combine granulated sugar, brown sugar, and evaporated milk, stirring until dissolved.
  3. Attach a candy thermometer and cook the mixture until it reaches 240°F (soft ball stage), stirring occasionally.
  4. Remove from heat and let cubes of butter melt into the mixture without stirring for about one minute.
  5. Stir in vanilla extract and toasted pecans until everything is well combined.
  6. Quickly drop spoonfuls onto the prepared baking sheet before the mixture sets.
  7. Allow pralines to sit at room temperature for about 30 minutes to harden.
