  • 1 cup granulated sugar (divided into 1/3 cup for egg whites, 2/3 cup for the batter)
  • 2 tablespoons cornstarch (or sifted cake flour)
  • 1 teaspoon vanilla extract (or zest of one lemon)
  • A pinch of salt
  • 3/4 cup full-fat yogurt

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare an 8-inch springform pan lined with parchment paper. Place a larger baking tray filled with hot water in the oven for a water bath.
  2. In a clean bowl, whip egg whites on medium speed until frothy, gradually adding 1/3 cup sugar until stiff peaks form.
  3. In another bowl, whisk together egg yolks, yogurt, vanilla extract (or lemon zest), cornstarch (or cake flour), and salt until smooth.
  4. Gently fold one-third of the whipped egg whites into the yolk mixture to lighten it, then carefully fold in the remaining egg whites until just combined.
  5. Pour the batter into the prepared pan and bake in the water bath for 50–60 minutes until golden on top. Let it cool in the oven with the door slightly ajar for about 15 minutes before serving.
