  • 1/2 cup unsalted butter, melted

  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine flour, sugar, baking powder, melted butter, and salt until crumbly. Reserve 1/2 cup for topping.
  3. Press the remaining mixture into an 8×8-inch baking pan lined with parchment paper and bake for 12-15 minutes until lightly golden.
  4. In another bowl, whisk together eggs, sugar, flour, lemon juice, and zest until smooth.
  5. Pour the lemon mixture over the baked crust and sprinkle with reserved crumb topping. Bake for an additional 20-25 minutes until set and slightly golden.
  6. Cool completely at room temperature before chilling in the refrigerator for at least an hour. Cut into squares and dust with powdered sugar before serving.
