  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 325°F (160°C). Prepare the crust by combining graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of a springform pan.
  2. In a large bowl, beat cream cheese until smooth. Add sugar and vanilla extract; mix until combined. Incorporate eggs one at a time and then fold in sour cream.
  3. Toss diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice in another bowl.
  4. Pour cheesecake filling over the crust, followed by the apple mixture. Top with crumble made from flour, brown sugar, and cubed butter.
  5. Bake for about 65 minutes until set. Allow to cool completely before refrigerating for at least 4 hours.
