  • 2 tablespoons olive oil
  • 4 cups beef broth
  • 5 carrots, chopped
  • 1 cup frozen peas
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons fresh rosemary
  • 1 teaspoon dried thyme
  • 2 each bay leaves
  • Mashed potatoes for serving

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef until golden brown, seasoning with salt, pepper, garlic powder, onion powder, rosemary, and thyme.
  2. Stir in the beef broth to deglaze the pot, scrapping up brown bits.
  3. Add chopped carrots and bay leaves; bring to a boil. Reduce heat and cover, allowing it to simmer for about 45 minutes.
  4. Five minutes before serving, stir in frozen peas and remove bay leaves.
  5. Serve hot alongside creamy mashed potatoes.
