  • 4 beef sausages
  • 1 large onion, sliced
  • 4 large potatoes, peeled and sliced
  • 2 large carrots, peeled and sliced
  • 3 cups chicken broth
  • 2 cloves garlic, minced

  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  2. In the same pot, cook the chopped bacon until crispy; then add sliced onions and minced garlic, sautéing until softened.
  3. Layer in the sliced potatoes and carrots over the bacon mixture.
  4. Pour in chicken broth and season with thyme, salt, and pepper.
  5. Return sausages to the pot. Bring to a boil then reduce heat to low; simmer for about one hour or until vegetables are tender.
  6. Garnish with fresh parsley before serving hot.
