  • 8 chicken thighs (or preferred cuts)
  • ½ head cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, combine dry rub ingredients. Coat the chicken pieces evenly.
  3. In a large oven-safe sauté pan over medium heat, cook bacon until crispy (discard if not using). Leave some fat in the pan.
  4. Sear the chicken in the same pan until golden brown on both sides; remove from pan.
  5. Sauté cabbage in remaining fat for about 2-3 minutes.
  6. Add sliced potatoes and onions along with chicken stock; stir well.
  7. Place seared chicken on top of the vegetable mixture and bake for 45–50 minutes until chicken reaches an internal temperature of 165°F (75°C).
