  • 1/4 cup white sugar
  • 1/2 cup light brown sugar
  • 1 teaspoon vanilla essence
  • 1 1/2 cups finely grated zucchini
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In one bowl, mix flour, cocoa powder, baking soda, and salt.
  3. In another bowl, combine eggs, oil, sour cream, white sugar, brown sugar, and vanilla until smooth.
  4. Gradually fold dry ingredients into wet ingredients until just combined.
  5. Gently stir in grated zucchini and half of the chocolate chips.
  6. Pour batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
  7. Bake for about 55 minutes or until a toothpick inserted comes out clean. Let cool before slicing.
