  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red apple vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • Fresh parsley for garnish

Instructions

  1. In a bowl, whisk together honey, olive oil, vinegar, garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken in a resealable bag or dish and coat with marinade. Refrigerate for at least 30 minutes (up to 4 hours for best flavor).
  3. Preheat oven to 400°F (200°C). Remove chicken from marinade and place in a baking dish.
  4. Spoon crumbled feta over each piece of chicken.
  5. Bake for 25–30 minutes until chicken reaches an internal temperature of 165°F (75°C). Broil for an additional 2–3 minutes if desired.
