  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Salt to taste
  • 2 tablespoons chopped green onions (for garnish)

Instructions

  1. Cook the rigatoni according to package instructions in salted boiling water until al dente. Drain and reserve half a cup of pasta water.
  2. In a skillet over medium-high heat, add olive oil and cook seasoned chicken cubes until golden brown (about 5-7 minutes).
  3. Add sliced carrots to the skillet and sauté for 3-4 minutes before adding minced garlic.
  4. Lower the heat and mix in butter, honey, soy sauce, and black pepper; simmer for 2-3 minutes until thickened.
  5. Combine the cooked chicken and vegetables with the rigatoni. If needed, use reserved pasta water to loosen the sauce.
