  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear seasoned chicken in a skillet over medium heat for 3–4 minutes per side until golden brown.
  3. Mix BBQ sauce and honey in a bowl.
  4. Toast uncooked rice in the skillet for 1–2 minutes, stirring frequently.
  5. Add chicken broth and half of the BBQ-honey mixture to the skillet; stir well.
  6. Return chicken to the skillet, cover, and let simmer on low heat for about 15 minutes.
  7. If using vegetables, add them after 15 minutes; cover and cook for an additional 5 minutes.
  8. Let sit off heat for five minutes before serving; garnish with chopped green onions.
