  • 1 packet taco seasoning
  • 6 medium flour tortillas
  • 1 can refried beans (16 oz)
  • 1 can red enchilada sauce (10 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

  1. Preheat your oven to 375°F. Lightly spray two baking sheets and arrange three tortillas on each.
  2. Cook the ground beef in a skillet over medium-high heat until browned, then drain excess grease.

  5. Spread a layer of beans on one tortilla, add one-third of the beef mixture, and stack with another tortilla.
