  • 4 bell peppers
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • 2 large eggs
  • ½ cup breadcrumbs
  • 1 Tbsp olive oil

Instructions

  1. Preheat oven to 400°F (204°C). Cut bell peppers in half lengthwise and remove seeds. Place cut side up on a parchment-lined baking sheet and brush with olive oil. Bake for 20 minutes.
  2. In a large bowl, mix wilted spinach, ricotta, mozzarella, parmesan, green onions, basil, dried herbs, eggs, salt, and pepper until well combined.
  3. Fill each pepper half with the ricotta mixture.
  4. In a small bowl, combine breadcrumbs with a tablespoon of olive oil and sprinkle over the stuffed peppers.
  5. Lower the oven temperature to 350°F (176°C) and bake for another 30 minutes or until golden brown. Optionally broil for an additional minute to achieve desired crispiness.
