  • 1 tbsp butter
  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 4 cups chicken stock
  • 2 cups cooked turkey or chicken
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves or 1 tsp dried thyme
  • Fresh parsley for garnish

Instructions

  1. In a large Dutch oven, melt butter over medium heat. Cook the bacon until crispy, then drain excess fat, leaving about two tablespoons.
  2. Add leeks, carrots, celery, and thyme; sauté for about five minutes until softened. Add garlic and cook one more minute.
  3. Sprinkle in flour and stir well. Gradually pour in chicken stock while scraping any browned bits from the bottom of the pot. Season with salt and pepper.
  4. Stir in potatoes, cooked turkey, and bay leaves; cover and place in a preheated oven at 350°F for 45 minutes.
  5. If desired, stir in cream before serving and garnish with fresh parsley.
