  • 1 leek (sliced)
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour (heaped)
  • 4 cups chicken or turkey stock
  • 2 cups cooked turkey or chicken
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • Fresh thyme and parsley

Instructions

  1. In a large Dutch oven, melt butter over medium heat and add sliced leeks, carrots, celery, and thyme. Cook for about 5 minutes until they soften.
  2. Stir in flour and gradually add stock, scraping any bits from the bottom. Season with salt and pepper.
  3. Add potatoes, cooked turkey or chicken, and bay leaves. Simmer uncovered in a preheated oven at 350°F for about 45 minutes.
  4. If desired, stir in heavy cream before serving and garnish with fresh parsley.
