  • 2 medium sweet potatoes (peeled and diced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 red bell pepper (diced)
  • 1 cup spinach (fresh or frozen)
  • 1 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper (to taste)
  • 1/2 cup shredded cheese (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onion and minced garlic for 2–3 minutes until fragrant.
  3. Add ground turkey to the skillet and cook until browned, about 5–7 minutes. Season with smoked paprika, ground cumin, chili powder, salt, and pepper.
  4. Stir in diced red bell pepper and spinach; cook until softened.
  5. Boil diced sweet potatoes in another pot until tender (about 10 minutes). Drain.
  6. In a baking dish, layer cooked sweet potatoes followed by the turkey mixture. Pour chicken broth over the top.
  7. If using cheese, sprinkle it on top and bake for 15–20 minutes until hot and bubbly.
  8. Let cool slightly before serving.
