  • 3 bell peppers (halved and seeded)
  • ⅔ cup uncooked white rice
  • ½ cup cherry tomatoes (quartered)
  • ½ cup kalamata olives (chopped)
  • ½ cup feta cheese (plus more for topping)
  • Fresh herbs like dill
  • Extra virgin olive oil
  • Garlic and onion for flavor

Instructions

  1. Preheat oven to 350°F.
  2. Cook rice according to package instructions.
  3. Slice bell peppers in half, remove seeds, and place cut side up in a baking dish.
  4. In a skillet, heat olive oil over medium heat and cook ground chicken until no longer pink; season with salt and pepper.
  5. Add Italian seasoning, diced onion, garlic, and zucchini to the skillet; cook for 2 minutes until softened.
  6. In a bowl, combine cooked rice with the chicken mixture, cherry tomatoes, olives, feta cheese, and dill; mix well.
  7. Stuff each pepper with the filling and sprinkle extra feta on top. Pour water into the dish around the peppers to steam while baking.
