Ingredients

Scale
  • 4 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips
  • 1/2 cup Reese’s Pieces

Instructions

  1. Prepare the cheesecake filling by mixing softened cream cheese, powdered sugar, and vanilla until smooth. Scoop dollops onto a parchment-lined baking sheet and freeze for at least one hour.
  2. In a large bowl, beat together softened unsalted butter, brown sugar, and granulated sugar until fluffy. Add the egg and vanilla; mix well.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually combine with the wet ingredients, then fold in chocolate chips and Reese's Pieces.
  4. Take about two tablespoons of cookie dough, flatten it slightly in your hand, place a frozen cheesecake filling piece in the center, and seal with more dough.
  5. Bake at 350°F (175°C) for 12-14 minutes until edges are golden but centers are still soft.
  6. Cool on the baking sheet for five minutes before transferring to a wire rack.
