  • 45 ripe peaches (peeled and diced)
  • 1/3 cup cane sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon orange juice
  • 1 1/4 cups gluten-free flour blend
  • 1 cup gluten-free quick oats
  • 1/4 cup brown sugar
  • 1/4 cup cane sugar
  • 1/2 teaspoon sea salt
  • 6 tablespoons solid coconut oil
  • 2 tablespoons pure maple syrup

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine diced peaches, cane sugar, cornstarch, cinnamon, and orange juice. Set aside.
  3. In a separate bowl, mix the gluten-free flour blend, oats, brown sugar, cane sugar, and sea salt. Add solid coconut oil and maple syrup; blend until crumbly.
  4. Press two-thirds of the oat mixture into a greased baking pan to form the crust.
  5. Layer the peach filling over the crust and sprinkle with the remaining oat mixture.
  6. Bake for 40-45 minutes until golden brown and bubbly.
  7. Allow to cool before slicing into squares and serving.
