Ingredients

  • 1 large bulb of garlic
  • 1.3kg / 2.8lb baking potatoes
  • 5 tbsp / 75g butter (2 tbsp melted)
  • 2 tbsp double cream
  • 60g / 3/4 cup freshly grated parmesan cheese
  • 4 large egg yolks
  • Olive oil (as needed)
  • Salt & pepper (to taste)
  • Fresh parsley (for garnish)

Instructions

  1. Roast the garlic by slicing off the top of the bulb, drizzling with olive oil, wrapping in foil, and baking at 180C/356F until soft.
  2. Peel and dice the baking potatoes into large pieces. Boil in salted water until fork-tender.
  3. Drain potatoes and return them to the pot. Add butter, cream, roasted garlic, and parmesan; mash until smooth. Season with salt and pepper before mixing in egg yolks.
  4. Pipe the mixture onto a baking tray lined with parchment paper into swirls.
  5. Drizzle with melted butter and bake at 200C/400F for about 15-20 minutes until golden.
