  • Pâte Sucrée dough (sweet shortcrust pastry)
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the tartlet shells by pressing Pâte Sucrée dough into tartlet pans and freezing for 15-30 minutes.
  2. Bake the shells at 375°F until golden brown, about 15 minutes.
  3. Make the strawberry jam by cooking chopped strawberries with sugar until thickened.
  4. For the pastry cream, combine sweetened condensed milk, whole milk, and heavy cream over medium heat. Temper egg yolks mixed with cornstarch into the hot mixture until thickened.
  5. Assemble by spreading strawberry jam in cooled tartlet shells and piping on chilled pastry cream. Top with fresh strawberry halves.
