  • 1/2 Baguette
  • 1 tbsp Olive Oil
  • 5 Onions (thinly sliced)
  • 300 g Cavatappi Macaroni
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • 1 tbsp Flour + 3 tbsp Water (for sauce)
  • Fresh Parsley (chopped)
  • 1 tsp Salt
  • 1 tsp Pepper
  • 2 tsp Oregano
  • 1 tsp Sugar
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika powder
  • 1/2 tsp nutmeg

Instructions

  1. Caramelize the onions in olive oil over medium heat for about 30-40 minutes until golden brown.
  2. Add beef broth to the pan if sticking occurs and simmer for an additional 10 minutes.
  3. In another skillet, create the sauce by whisking flour into melted butter, then gradually add heavy cream until thickened.
  4. Stir in two-thirds of the caramelized onions into the sauce along with salt, pepper, parsley, and Parmesan cheese.
  5. Cook cavatappi macaroni until just shy of al dente; combine with the sauce.
  6. Transfer to a baking dish, top with remaining onions and breadcrumbs from baguette.
  7. Bake at 350°F (175°C) for 10-15 minutes until golden.
