  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • ½ cup beef broth (or vegetable broth)
  • 4 large Yukon Gold potatoes
  • 1 tablespoon butter (for greasing)
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup Parmesan cheese, grated
  • 1 cup heavy cream or whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves

Instructions

  1. Start by melting the butter and olive oil in a large skillet over medium heat. Add the sliced onions along with salt and pepper. Sauté them until they're soft and golden brown—this usually takes about 20-25 minutes.
  2. Once your onions are beautifully caramelized, stir in garlic powder, dried thyme, and broth. If you opted for sugar earlier, add that now too. Let this mixture simmer gently for about 5 minutes.
  3. In a greased baking dish, begin layering half of your potato slices at the bottom. Season them lightly with salt and pepper. Pour half of the onion mixture over these potatoes, followed by half of both cheeses—Gruyère and Parmesan.
  4. Repeat with another layer of potatoes followed by the remaining onion mixture and cheeses. Pour heavy cream or milk evenly over everything.
  5. Cover your baking dish with foil and pop it into a preheated oven at 375°F (190°C). Bake for about 45 minutes until everything is bubbling away nicely! For an extra crispy top, remove the foil during the last 15 minutes.
  6. Once out of the oven, let your French Onion Potato Bake rest for about 10 minutes before serving. Sprinkle fresh thyme leaves and extra Parmesan on top for garnish.
