  • 2 lbs beef short ribs
  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 6 slices of baguette or crusty bread, toasted
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. Season short ribs with salt and pepper. In a large pot, heat olive oil over medium-high heat and sear the ribs until browned on all sides. Remove and set aside.
  2. In the same pot, melt butter and add sliced onions. Cook slowly over medium heat until caramelized (20-25 minutes).
  3. Stir in minced garlic and cook for an additional minute. Add beef broth, Worcestershire sauce, bay leaf, thyme, salt, and pepper; bring to a boil then reduce to a simmer for about two hours.
  4. Add the seared short ribs back into the pot and simmer for another hour until they are tender.
  5. Serve hot with toasted baguette slices topped with shredded cheese under the broiler until melted.
