  • 1/4 cup rice vinegar (or malt vinegar)
  • 1/4 cup brown sugar
  • 1/4 cup lemon juice
  • 1/2 cup extra virgin olive oil

  1. Preheat your oven to 325°F and prepare a roasting pan with a rack.
  2. Remove packaging from the thawed turkey breast and place it upside down on the rack.
  3. In a bowl, whisk together vinegar, lemon juice, and brown sugar until smooth. Gradually drizzle in olive oil while whisking until emulsified.
  4. Split the marinade into two bowls. Generously coat the underside of the turkey with one bowl of marinade, then flip it over and coat the top and sides.
  5. Roast in the preheated oven for about 2 hours or until the internal temperature reaches 165°F, basting occasionally with the second bowl of marinade.
