  • Salt & pepper (to taste)
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped finely)
  • 1 tablespoon fresh thyme (chopped finely)
  • 1 tablespoon fresh rosemary (chopped finely)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)

Instructions

  1. Let the turkey warm to room temperature for about an hour before roasting.
  2. In a bowl, mix softened butter with chopped herbs, minced garlic, salt, and pepper.
  3. Preheat your oven to 450°F.
  4. Remove giblets from the turkey and pat dry; season inside and out with salt and pepper. Stuff with lemon halves and garlic cloves.
  5. Rub herb butter all over the turkey.
  6. Place the turkey breast side up on a rack in a roasting pan; reduce oven temperature to 350°F.
  7. Roast until an instant-read thermometer reads 165°F in the thickest part of the thigh (about three hours).
  8. Let rest for twenty minutes before carving.
