  • 8 oz rotini pasta
  • 2 cups corn (fresh or frozen; grilled preferred)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup fresh cilantro, chopped
  • 1 green onion, sliced
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper, to taste

Instructions

  1. Cook the rotini pasta according to package instructions in salted water. Drain and rinse under cold water.
  2. Grill fresh corn until lightly charred or thaw frozen corn.
  3. In a large bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  4. Add cooked pasta, corn, cotija cheese, cilantro, and green onion to the dressing; toss to combine.
  5. Taste and adjust seasoning if needed. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with extra cotija cheese, cilantro, and chili powder before serving.
