  • 1 cup warm water (110°F/43°C)
  • 1 tablespoon honey (or sugar)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup olive oil (extra virgin), plus more for drizzling
  • 2 tablespoons fresh rosemary (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon sea salt (flaky or coarse)

Instructions

  1. Activate the yeast by dissolving it with honey in warm water; let sit until foamy (about 5 minutes).
  2. In a large bowl, combine the yeast mixture with flour, salt, and olive oil until a sticky dough forms. Cover and let rise in a warm place for 45–60 minutes.
  3. Preheat the oven to 375°F (190°C) and grease a 12-cup muffin tin with olive oil.
  4. Spoon the risen dough into muffin cups, filling each about ¾ full.
  5. Drizzle with olive oil, then sprinkle with chopped rosemary, minced garlic, and sea salt.
  6. Bake for 18–20 minutes until golden brown; rotate halfway through for even baking.
  7. Let cool slightly before transferring to a wire rack.
