  • 1 cup uncooked long grain white rice
  • 1 medium zucchini, coarsely grated (about 1½ cups)
  • 2 cups chicken broth
  • Tzatziki sauce
  • Pita bread
  • Fresh herbs (dill, basil, parsley, or chives)
  • Fresh lemon

Instructions
