  • 1 cup granulated sugar
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • ½ cup vegetable oil
  • ½ cup hot coffee
  • 2 cups shredded phyllo dough (kataifi)
  • 2 tablespoons butter
  • 1 cup pistachio cream
  • 4 oz milk or semi-sweet chocolate bar
  • ½ cup heavy cream

Instructions

  1. Preheat your oven to 350°F and grease your baking pan.
  2. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add egg, vanilla extract, milk, and vegetable oil; mix until blended.
  4. Stir in hot coffee until the batter is smooth.
  5. Pour batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool for at least 10–15 minutes before removing from the pan.
  7. Toast chopped kataifi in butter until golden brown; mix with pistachio cream.
  8. For ganache, microwave chopped chocolate with heavy cream until melted; whisk until smooth.
  9. Assemble by spreading the pistachio mixture on top of the cooled cake and pouring ganache over it.
  10. Garnish with extra pistachio cream or crushed nuts if desired.
