  • 1 cup salted butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup strawberry jam
  • 2 ounces cream cheese
  • 2 cups powdered sugar
  • 1/4 cup hot milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend freeze-dried strawberries into a fine powder.
  3. In a mixing bowl, cream together butter, sugar, and vanilla until fluffy. Beat in the egg.
  4. Gradually add flour, baking soda, part of the strawberry powder, and salt until combined. Stir in strawberry jam.
  5. Roll dough into small balls and place on the baking sheet with space in between.
  6. Bake for about 8 minutes; tap the tray to flatten and bake for an additional 2-3 minutes until lightly golden.
  7. For icing, mix cream cheese, powdered sugar, hot milk, vanilla extract, and remaining strawberry powder until smooth.
  8. Once cooled, dip or drizzle icing over cookies.
