  • 1 cup almond milk (or any non-dairy milk)

  • 1 teaspoon vanilla extract
  • For Cinnamon Swirl: 1/4 cup granulated sugar, 2 teaspoons ground cinnamon

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, sugar, baking powder, ground cinnamon, and salt.
  3. In another bowl, beat eggs with almond milk, vegetable oil, and vanilla extract until combined.
  4. Pour wet ingredients into dry ingredients; stir gently until just combined.
  5. In a small bowl, mix sugar and cinnamon for the topping.
  6. Grease a loaf pan; pour half the batter in, sprinkle half the topping over it, add remaining batter followed by rest of topping.
  7. Bake for 45-50 minutes or until toothpick comes out clean.
  8. Cool for 10 minutes before transferring to a wire rack.
