  • 24 g white grape juice (optional)
  • 1 cup ice water
  • 113 g unsalted butter
  • 56 g bittersweet chocolate

  • 106 g dark brown sugar
  • 25 g cornmeal
  • 4 eggs (room temperature)

Instructions

  1. Prepare the pie crust by mixing flour and salt in a bowl. Cut in cold butter until crumbly, then add white grape juice (if using) and mix in ice water until dough forms. Chill while preparing filling.
  2. Melt butter and chocolate in a saucepan over low heat. Stir in cocoa powder, espresso powder, and salt until smooth. Remove from heat and whisk in milk, sugars, cornmeal, eggs, and vanilla until blended.
  3. Roll out the crust and fit into a pie dish. Pour the filling into the crust and bake at 350°F (175°C) for about 90 minutes until set with a slight jiggle in the center. Cool completely before slicing.
