  • 67 medium Yukon gold potatoes, thinly sliced
  • ½ white or yellow onion, cut into slices
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese, shredded
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt, plus more to taste
  • Freshly ground black pepper
  • ½ cup gruyere cheese, or more sharp cheddar
  • ¼ cup grated parmesan
  • Fresh chopped parsley for garnish

Instructions

  1. Preheat your oven to 375°F and grease a baking dish.
  2. Layer thinly sliced potatoes and onions in the dish, sprinkling onions in between.
  3. In a saucepan over medium heat, melt butter, then whisk in flour and gradually add milk until smooth.
  4. Stir in shredded cheddar, garlic powder, salt, and pepper until combined.
  5. Pour the sauce evenly over the layered potatoes.
  6. Cover with foil and bake for about 45 minutes.
  7. Remove foil, add gruyere and parmesan on top, then bake uncovered for an additional 30-45 minutes until golden brown.
  8. Let it rest before garnishing with parsley and serving.
