Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim and halve Brussels sprouts, then pat them dry.
  3. Toss the sprouts in a bowl with olive oil, salt, and pepper until evenly coated.
  4. Spread them cut-side down on a parchment-lined baking sheet without overcrowding.
  5. Roast for 20–25 minutes until golden brown and crispy, flipping halfway through.
  6. While roasting, prepare the glaze by simmering balsamic vinegar, honey, and Dijon mustard in a small saucepan for 2–3 minutes until slightly thickened.
