  • 2 sheets puff pastry (thawed)
  • ⅔ cup granulated sugar
  • ½ cup cornstarch
  • ¼ tsp kosher salt
  • 3½ cups whole milk (warm)
  • 6 large egg yolks (room temperature)
  • 1 vanilla bean (seeds scraped out) or 2 tsp vanilla bean paste
  • 4 Tbsp unsalted butter (cold, cubed)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C). Line two baking trays with parchment paper.
  2. Roll out puff pastry to about 9×9 inches and prick with a fork. Place on trays, cover with parchment, and weigh down.
  3. Bake for 35-45 minutes until golden brown; cool completely.
  4. Trim edges of cooled puff pastry to fit an 8×8-inch pan.
  5. In a saucepan, whisk together sugar, cornstarch, and salt; add egg yolks and mix well.
  6. Warm whole milk in another saucepan until steaming, then slowly pour into the egg mixture while whisking.
  7. Return mixture to heat and cook while whisking until thickened (about 5-7 minutes). Stir in vanilla seeds and butter until smooth.
  8. Assemble by placing one piece of puff pastry at the bottom of the pan, pouring custard over it, topping with another pastry layer, pressing gently. Cover tightly and chill for at least four hours or overnight.
  9. Slice into squares and dust with powdered sugar before serving.
