  • ½ cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth

  • ½ teaspoon red pepper flakes
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups baby spinach

  1. Cook the penne pasta in salted boiling water until al dente. Reserve 1 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium-high heat and brown the sausage for about 5-7 minutes. Remove and set aside.
  3. Sauté garlic in the same skillet until fragrant. Add sun-dried tomatoes, chicken broth, Italian seasoning, and red pepper flakes.
  4. Stir in the cream and let simmer until thickened. Add Parmesan cheese until melted.
  5. Mix in the cooked sausage and spinach, cooking until wilted.
  6. Combine with the drained pasta, adjusting consistency with reserved pasta water if needed.
