Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 cups cooked jasmine or basmati rice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken with salt and pepper. In a skillet, heat olive oil over medium heat and sear chicken for 5-7 minutes per side until golden brown. Remove from the skillet.
  2. Sauté diced onions in the same skillet for 3-4 minutes, then add minced garlic and cook until fragrant.
  3. Pour in chicken broth, scraping up any browned bits from the pan.
  4. Stir in heavy cream, Dijon mustard, paprika, garlic powder, and onion powder; simmer for about 5 minutes.
  5. Add shredded cheese until melted and combined.
  6. Return chicken to the skillet, spoon sauce over it, and simmer for another 3-4 minutes.
  7. Serve over cooked rice and garnish with fresh parsley.
