  • 12 oz chicken or turkey sausage
  • 1 tablespoon olive oil
  • 1 large sweet potato, peeled and cubed
  • 5 cloves garlic, minced
  • 8 oz tortellini (three-cheese)
  • 4 oz fresh spinach
  • 1/2 cup heavy cream (or coconut milk for dairy-free)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon tomato paste
  • 6 cups water

Instructions

  1. Heat olive oil in a large pot over medium heat. Add crumbled sausage and cook until browned.
  2. Drain excess grease. Add Italian seasoning, paprika, sweet potato, garlic, red pepper flakes, and tomato paste. Stir to combine.
  3. Pour in 6 cups of water and bring to a boil.
  4. Reduce heat to simmer for about 15 minutes until sweet potatoes are tender.
  5. Add tortellini and cook according to package instructions (about 10 minutes).
  6. Stir in fresh spinach until wilted, then add heavy cream off the heat.
  7. Season with salt if needed and serve garnished with fresh thyme.
