  • 2 lbs fresh tomatoes (Roma or vine-ripened), halved
  • 1 whole head of garlic
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 2 cups vegetable or chicken broth
  • ½ cup heavy cream (or coconut milk for dairy-free option)
  • ¼ cup fresh basil leaves
  • Salt and black pepper to taste
  • ½ tsp red pepper flakes (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Arrange halved tomatoes on the baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and place on the baking sheet.
  4. Roast for 30–35 minutes until tomatoes are caramelized and garlic is soft.
  5. In a large pot, heat olive oil over medium heat. Sauté chopped onion until soft (about 5 minutes).
  6. Squeeze roasted garlic into the pot, add tomatoes, broth, and basil; blend until smooth using an immersion blender.
  7. Stir in cream or coconut milk and simmer gently for another 5–10 minutes.
  8. Serve warm, garnished with fresh basil.
