  • 34 medium carrots (peeled and chopped)
  • 12 celery stalks (chopped)
  • 1/2 medium onion (chopped)
  • 4 cups low-sodium chicken broth
  • 1 cup cream or half-and-half
  • 1 lb potato gnocchi
  • 3 cups baby spinach
  • 2 Tablespoons fresh parsley (flat or curly, chopped)
  • 45 cloves garlic (minced)
  • 1 Tablespoon Italian seasoning
  • Salt and black pepper to taste
  • 1 teaspoon Better than Bouillon chicken seasoning base (optional)
  • Pinch red pepper flakes (optional)
  • 12 Tablespoons cornstarch

Instructions

  1. Place chicken, carrots, celery, onion, parsley, garlic, Italian seasoning, salt, and pepper in the slow cooker.
  2. Pour in the chicken broth and stir gently.
  3. Cover and cook on low for 6-8 hours or high for 4 hours until chicken is tender.
  4. Shred the chicken inside the crockpot with two forks.
  5. Combine cream and cornstarch in a bowl; whisk until smooth. Add to the soup along with gnocchi and spinach.
  6. Cook on high for another 30-45 minutes until thickened.
  7. Adjust seasoning as desired and serve.
