  • 1/4 cup cashew butter (or almond/sunflower seed butter)
  • 23 tbsp milk (dairy or non-dairy)
  • 1/4 cup mini chocolate chips
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 cup milk chocolate chips
  • 1 tsp coconut oil (or vegetable oil)

Instructions

  1. In a medium bowl, whisk together almond flour, protein powder, and salt.
  2. In another bowl, mix cashew butter, milk, honey (or maple syrup), and vanilla until smooth.
  3. Combine both mixtures until well blended.
  4. Gently fold in mini chocolate chips without overmixing.
  5. Adjust consistency with more milk if necessary.
  6. Roll into 1-inch balls and place on a parchment-lined plate.
  7. Chill in the refrigerator for at least 30 minutes to firm up.
  8. Melt additional milk chocolate chips with coconut oil; dip each ball and sprinkle with extra mini chocolate chips.
  9. Refrigerate again until set.
