  • 1 lb ground beef (80% lean)
  • 1 small onion (diced)
  • ½ cup bell pepper (diced)
  • 3 cloves garlic (diced)
  • 1 tablespoon tomato paste
  • 8 oz tomato sauce
  • 14.5 oz can diced tomatoes (undrained)
  • ½ cup chicken broth
  • 2 cups macaroni (uncooked)
  • 2 tablespoons butter
  • 1½ cups cheddar cheese (shredded)

Instructions

  1. Brown the ground beef in a large pot over medium heat until cooked through, breaking it apart as it cooks.
  2. Add diced onion, bell pepper, and garlic to the pot; sauté for about 5 minutes until softened.
  3. Stir in tomato paste, tomato sauce, diced tomatoes, chicken broth, and kidney beans; let simmer for 15 minutes.
  4. In another saucepan, melt butter over medium heat and whisk in flour to create a roux. Gradually add heavy cream and milk until smooth; season with mustard powder and onion powder.
  5. Mix in shredded cheddar cheese until melted, then combine macaroni with the cheese sauce before folding it into the chili mixture.
  6. Serve hot, garnished with fresh parsley.
